
I've been making this Granola fairly consistently for a number of years now, having been first given it one Christmas, in a handmade food hamper created by Jacqueline's sister. It really does taste like nothing else available on the shelves in your local store and the times we run out make me not popular around the breakfast table! The recipe is not critical and you could add or subtract items as desired (sometimes I add pistachios) or increase/decrease amounts (more oats make it go a lot further!). I tend to make double and it lasts Jackie and myself around 10 days but disappears fast when the boys visit! Jumbo Oats ~ 250g Porridge Oats ~ 250g Sunflower Seeds ~ 60g Pumpkin Seeds ~ 60g Hazelnuts (chopped then toasted) ~ 60g Almonds (chopped) ~ 60g Light sunflower oil ~ 60ml Clear Honey ~ 60ml Raisins ~ 60g Sweet Cranberries ~ 60ml Mix oats, seeds and nuts in large bowl (I always chop the nuts by hand with a large knife, as blasting them in a processor can reduce them to dust). Gently heat oil and honey in a small pan then mix into the dried ingredient. Spread onto baking sheet or shallow roasting tin and bake at Gas Mk1 or 140c for approximately 50mins, checking and turning so it becomes a uniform golden colour. When cool, add the dried fruit and store in a tin or jar. Serve and add milk or yoghurt. Have a happy breakfast :)G |
